One Pot Basil Pesto Chicken


Okay, time for some food:

This is an old weight watchers recipe adapted a wee bit by moi:

Serves 4 tiny eaters or 2 normal people

2 large skinless chicken breasts
basil pesto
1 cup brown rice
1 cup Campbells Real Chicken Stock
3/4 cup water
2 cloves garlic
red onion
small amount olive oil
Veges of your choice


Place olive oil in large saucepan (or pot - depending on your country of origin). Add chopped red onion and chopped garlic. Saute. Add brown rice, stir until rice goes golden. Add chicken stock and water and give a quick stir. Smear basil pesto over one side of each of the chicken breasts. If they are thick breasts you might want to slice in half to allow for more thorough cooking. Place breasts (he he he) on top of rice. Bring to boil, cover and simmer for around 30 mins. Then add ready to steam vegetables of your choice. My favourites are carrots and brocolli. Cover and simmer for a further 7 or so minutes (check veges are tender and it will all be ready to go). Enjoy!!
